Crispy Baked Potato Chips and Dijon Dip Recipe Is A Better-For-You Snack

Our zesty dip makes 'em extra irresistible

Potato chips are my all-time favorite munchy. But lately I’ve been trying to introduce healthier snacks into my diet. That’s why I love this Baked Potato Chips with Dijon Dip recipe. With only 2 grams of saturated fat per serving, it satisfies a craving almost guilt-free.

Plus, we have a few tricks to achieve that crispy texture we all love. First, cut the potatoes into super-thin slices. A mandoline makes it easy to do, but if you don’t have one, a vegetable peeler works well too. Next be sure to arrange the slices in a single layer on your baking sheet. That way the high oven heat will come in contact with the bottom and top of each slice to prevent steaming and soggy chips. There so simple to make, you’ll never go back to store-bought chips again—and our quick-fix dip makes ’em sensational! Give it a go then let us know what you think.

Ingredients

  • ½ cup mayonnaise
  • ¼ cup Dijon mustard
  • 2 Tbs. creamy horseradish sauce
  • ½ tsp. grated lemon zest
  • 1½ lbs. baking potatoes, cut into 1/8"-thick slices
  • ½ tsp. salt
  • ¼ tsp. pepper

Heat oven to 425°F. Coat 2 large rimmed baking sheets with cooking spray. In bowl, stir together mayonnaise, Dijon mustard, horseradish sauce and lemon zest until blended; reserve.

In large bowl, sprinkle and toss potato slices with salt and pepper. Arrange potato slices in single layer over baking sheets. Bake until crisp and browned, 15–17 min., flipping chips halfway through baking time. Serve with reserved mayonnaise dip.
