- 1 red onion, chopped
- 2 tsp. minced garlic
- ½ tsp. dried thyme
- Âź cup butter
- 2 (14.5 oz.) cans fire roasted diced tomatoes
- 1 cup beef broth
- 1 Tbs. brown sugar
- Sour cream
Instructions
PrintIn pot, add red onion, minced garlic, thyme and 1â2 cup water; heat over medium-high heat. Cook, stirring occasionally, until onions are caramelized, about 15 min. Add butter, tomatoes, broth and brown sugar. Reduce heat to low; simmer 20 min.
Transfer 3â4 soup mixture to highpowered blender, puree until smooth. Return to pot. Serve warm in bowls with dollops of sour cream.
