Juicy Peach Bellinis Recipe Goes Great With Brunch + Makes a Perfect Summertime Sip

I feel like a kid in a candy store when peach season arrives. Few things are better than eating a ripe peach and it’s a fruit that can be used in pies, cobblers or cake, but it’s also the perfect pairing for a beverage, especially one for brunch. That was the inspiration behind our Juicy Peach Bellinis recipe.
Bellinis originated in Venice, Italy, and this sweet sip looks like sunshine in a glass. Typically made with only two ingredients — peaches and prosecco — we add a little flair with some triple sec and simple syrup. Triple sec gives a pop of citrus, but if you don’t have any on hand, you can use Grand Marnier or Cointreau instead. Blend up your peaches with the simple syrup and liqueur, combine that in a glass with prosecco and enjoy! You’ll definitely be going back for refills with this drink.

- ¾ cup drained canned sliced peaches in juice, from 15 oz. can
- ¼ cup triple sec
- 2 Tbs. simple syrup
- 2 (750 ml.) bottles Prosecco or other sparkling white wine
- Peach slices for garnish (optional)
Instructions
PrintBlend fruit, triple sec and simple syrup until smooth. Add 2 Tbs. puree to glass; top off with Prosecco.
