This 20-Minute Rainbow Skillet Recipe is Packed With Delicious Superfoods

This gorgeous dinner is rich in protein, vitamins — and flavor

I crave meals that not only taste great but are also good for me. The trouble is, sometimes it’s tough to get flavor and healthy in the same dish. That’s why we set out to create a meal that satisfies on every level: super delicious, super healthy, and super simple to make. The result is this scrumptious rainbow skillet recipe. It’s loaded with vegetables like broccoli, cabbage, peppers and carrots, which are sauteed with onion and garlic, and then cooked in broth with some ground turkey. The dish has tons of protein and fiber, vitamins A,C, and E and it tastes great.

Our secret: We add some Italian seasoning for a kick. Served over rice (or cauliflower rice) it’s absolutely perfect! Not to mention the fact that it’s a complete meal, and you cook it all in one pan.

Ingredients

  • 1/2 white onion, chopped
  • 2 tsp. minced garlic
  • 4 cups assorted veggies, chopped
  • 1 tsp. avocado oil
  • 8 oz. ground turkey
  • 1 tsp. Italian seasoning
  • 1/4 cup broth

In skillet, sauté onion, garlic and veggies in oil until crisp-tender, about 4 minutes. Add meat and seasoning; cook 5 minutes. Add broth; simmer until turkey cooks through. Enjoy over quinoa or cauliflower rice.
