We love a good salad — it’s the perfect way to get a flavorful side dish or appetizer, and all those crunchy veggies are so delicious together. For this mix, we skip the lettuce and instead combine celery, tomato, onion and fresh herbs. An easy-from-scratch vinaigrette adds even more flavorful. Ingredients
- 3 Tbs. olive oil
- 2 Tbs. red wine vinegar
- ½ tsp. dried oregano
- ¼ tsp. salt
- ⅛ tsp. pepper
- ⅛ tsp. garlic powder
- 3 tomatoes, cut into 3⁄4" pieces, about 3 cups
- 2 ribs celery, sliced
- ½ cup celery leaves, coarsely chopped
- ½ cup parsley leaves, coarsely chopped
- ⅓ cup chopped red onion
- 1 cup seasoned herb croutons
Instructions
• In large bowl, whisk oil, vinegar, oregano, salt, pepper and garlic powder until blended and emulsified.
• Add tomatoes, celery, celery leaves, parsley leaves and red onion; toss until vegetables are coated in dressing mixture. Transfer to serving bowl; top with croutons.
