Easy Spinach, Fennel & Grapefruit Salad Recipe: Nutritious and Oh-So Delicious!

I love a crisp salad with my evening meal. But sometimes I crave something a bit more surprising than the usual lettuce, tomatoes and cucumbers. If you feel the same way, then you’ve got to give this Spinach, Fennel & Grapefruit Salad recipe a try. It’s light, refreshing and couldn’t be easier to toss together. Spinach is rich in minerals such as iron and potassium. Fennel has a licorice-like flavor and is loaded with antioxidants. Juicy grapefruit contains vitamin C — it’s tart-sweet finish perfectly balances the slightly bitter greens and aromatic fennel. Radishes are high in fiber and add just the right amount of crunch. Ingredients

  • 1 small bulb fennel, about 8 oz.
  • 1 grapefruit
  • 1 avocado
  • 4 radishes
  • ¼ cup bottled olive-oil-and-vinegar salad dressing
  • 1 (5 oz.) pkg. baby spinach
  • ½ cup walnut halves, toasted if desired

Instructions

• Chop enough fennel fronds to equal 1 Tbs.; transfer to large serving bowl. Grate ½ tsp. zest from grapefruit; add to fronds. Peel grapefruit; cut into segments. Trim fennel; thinly slice. Pit, peel and slice avocado. Slice radishes.

• Whisk dressing into fennel frond mixture. Add spinach, sliced fennel, grapefruit segments, avocado, radishes and walnuts; gently toss until combined. Serve immediately.
