Sweet + Salty Watermelon and Feta Salad Recipe — Ready in Just 15 Minutes

Sweet fruit complements salty cheese perfectly in this refreshing side that’s bursting with summer flavor

When you think of summer barbecues, pool parties or family reunions, it’s easy to think of watermelon too. There are few better moments than feeling the juice dribble down your chin when you eat a piece on a hot, sunny day, or enjoying the crisp sweetness when you’re sipping a frozen margarita. This fruit is incredibly versatile, and that’s why we put a savory twist on it with our Watermelon and Feta Salad recipe.

We chose zesty feta for our cheese, but if the Greek staple isn’t for you, there are other options that will bring out that contrasting salty bite. For a cheese that’s less crumbly, halloumi is the way to go. It’s a bit softer than feta but still delivers on flavor. Goat cheese would also work well and would add a delicious creamy element. Ingredients

  • ½ cup extra-virgin olive oil
  • ¼ cup balsamic vinegar
  • ¼ tsp. salt
  • ½ tsp. pepper
  • 6 Tbs. fresh basil, chopped
  • 1 (6 lb.) seedless watermelon, flesh cut into 1" cubes
  • 2 (4 oz.) pkgs. watercress
  • 1 small red onion, sliced
  • 6 oz. feta or goat cheese, crumbled
  • Additional basil leaves (optional)

Instructions

• Dressing: Add oil, vinegar, salt and pepper to blender; blend until smooth. Add chopped basil; pulse 3 times.

• Salad: Combine watermelon, watercress and onion in large bowl. Pour dressing over; toss gently to mix. Sprinkle with cheese and, if desired, basil leaves just before serving.
